Chocolate Chip Banana Bread Cake
Soft. Buttery. Banana-flavored without being mushy. Loaded with just enough chocolate to satisfy the sweet tooth, plus those little surprises of banana slices that give texture. This is the kind of banana bread cake you make when you want dessert and comfort.
Ingredients
3 medium ripe bananas (2 mashed, 1 sliced)
½ cup butter, melted
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
½ cup sour cream (or Greek yogurt)
1 teaspoon baking soda
1 teaspoon kosher salt
1½ cups all-purpose flour
½ cup chocolate chips
Directions
Preheat oven to 350°F. Grease your loaf or cake pan. For easier removal, line with parchment paper if you’d like.
Mash 2 bananas in a small bowl, leaving them slightly lumpy. Slice the third banana and set it aside.
In a large bowl, whisk together the melted butter and sugar until smooth.
Add eggs and vanilla, mixing until fully combined.
Stir in sour cream, mashed bananas, baking soda, and salt.
Gently fold in the flour until just combined (don’t overmix).
Fold in the banana slices and chocolate chips.
Pour the batter into your prepared pan and smooth the top.
Bake for 45-50 minutes. Check doneness with a toothpick—it should come out clean or with a few moist crumbs.
Allow to cool in the pan for 15 minutes before removing to a wire rack to cool completely.
